Winter may be coming, but there’s a break in the rain, the air smells like dried leaves, and pumpkin beer is on tap. Woooo!

OCTOBER MEAL PLAN: NOTES

Overview:

  • This month’s plan is designed to mix and match recipes

  • Some recipes are smaller servings (2-4), which you can easily multiply

  • There is an emphasis on simple flavoring and seasoning with fresh or dried herbs, which are incredibly immune-boosting for this time of year.

I’ve included some of my favorite recipes, including:

  • My #1 recipe on my food blog—Crispy Italian Baked Tofu—improved for the plan. (With an option to make plain, crispy tofu for picky palates.)

  • Apple and Olive Oil Cake from Seasonal Family Almanac (currently on sale for $29 on Amazon, and a must-have for holiday recipes, crafts, and DIY gifts).

  • Continuing the theme of food as preventative medicine, I’ve included the easiest ā€œmedicinalā€ seasoning: Herby Salt Sprinkles.

I’ve been following Laura Artega and her family at Six Hungry Feet, who offer delicious plant-based recipes! I loved her post on Seasonal Ingredients for Fall and their Health Benefits. After reading about the butternut squash haul from their garden, I asked if she had a squash pasta recipe to share for the October Meal Plan.
